Sauteed Balsamic Kale

Fig and Rose Sauteed Balsamic Kale

I've been a little wary of kale, but have been trying to get myself to use it since it's so damn good for you.  But after this recipe, I'm converted.  This was delicious - not overpowering, but flavorful.  We can be friends, now, kale.

I made this alongside the Broiled Salmon in Oyster Sauce, which paired great.

Ingredients:

1 1/2 lbs. Kale, chopped
Olive Oil
1 tsp Red Pepper Flakes (to taste)
2 Garlic Cloves, diced
1/2 cup Water
2 tsp Balsamic Vinegar


1. Heat olive oil over medium heat and add red pepper flakes.  Allow them to sizzle for a few minutes.


2. Add garlic and cook until softened, about 1 minute.

3. Raise heat to high and add kale and water.  Toss to combine, cover and cook for 5 minutes, or until water has evaporated.


The kale condenses like crazy when cooked, so don't be afraid to fill the pot up!

4. Take off heat and add balsamic vinegar.



Delicious, balanced meal.
